Noble Tavern has opened The Sterling, a new event space designed to hold approximately 40 guests. The room is located at 1650 Central Avenue in St. Petersburg, directly adjacent to the restaurant. It operates as a shared space between the restaurant and the Tru by Hilton St. Petersburg Downtown Central Avenue hotel, where Noble Tavern occupies the ground floor.

The venue features a separate entrance on Central Avenue and began hosting events in September. Bradley Elia, vice president of marketing for Noble Tavern, stated that the new room allows the brand to expand its guest experience beyond the restaurant's smaller footprint. Noble Tavern typically seats up to seven guests, making The Sterling a larger venue for sharing and gathering.

Elia described the space as an extension of the restaurant but distinct in its design. He noted that the room incorporates an "old world" aesthetic similar to Noble Tavern while maintaining a modern feel appropriate for the hotel. Elia served as the designer for the project, aiming to blend the restaurant's style with the hotel's identity. He explained that the hotel already possessed items used to furnish the room.

The venue has hosted between six and seven events since its opening. It is available for private parties, business meetings, and ticketed experiences. These include chef-driven dinners, sports watch parties, acoustic performances, and cocktail tastings. During the restaurant's non-business hours, the Tru by Hilton uses the room for its own meetings and events, a partnership Elia described as a key component of the project.

Ensuring proper sound quality was a primary focus during the room's preparation. Elia stated that the team padded the space specifically to manage acoustics. He identified hosting the first event as a major milestone in the process. Elia has worked with the Noble Crust and Noble Tavern organizations for over a decade, starting as a private events coordinator before becoming the executive director of marketing and events.

Noble Tavern first opened its doors in October 2025. The development of The Sterling took approximately six months. Elia said the team initially focused on perfecting the in-house dining experience before expanding to the new venue. He recalled the process as a full circle moment, citing his long history with event planning for the organization.
